Traditional Scottish Tablet Recipe
Try this traditional Scottish tablet recipe! Scottish tablet is a delightful treat that is similar to fudge, but has a grainier texture and real sweet bite to it.
Scottish tablet is a favourite Halloween treat that is often handed out to children who go guising (trick or treating) here in Scotland.
As the weather turns cold, Scottish tablet is an all round winner this time of year. Thanks to its rich, buttery, and sweet flavour, Scottish tablet is practically a comfort food – and a sweet addition to any Christmas present, too.
Ingredients
- 900g (2 lbs) granulated sugar
- 250ml (1 cup) whole milk
- 100g (7 tbsp) unsalted butter
- 1 can of sweetened condensed milk (one standard tin)
Equipment
- Line a 13×9 inch (or similar) baking tray greased with butter.
- Use a large, heavy-bottomed pan to prevent the mixture from sticking.
Method
- To the pan add the granulated sugar and milk. Heat to medium and stir until the sugar completely dissolves.
- Add the butter and allow it to melt
- Mix in the condensed milk and increase the heat to bring the mixture to a slow boil. Stir continuously to avoid burning the bottom!
- Lower the heat slightly and let the mixture simmer for 15-20 minutes, stirring frequently. You’re aiming for a light golden colour.
- The tablet is ready when the mixture reaches the “soft-ball” stage (about 120°C on a sugar thermometer). If you don’t have a thermometer, drop a little of the mixture into a cold glass of water; it should form a soft ball.
- Remove from the heat and allow the mixture to settle a little before beating. Beat with a wooden spoon in the pan until the mixture it’s almost setting.
- Pour mixture into your pre-greased tray and spread evenly.

Leave to set for a few hours at room temperature. Once it has set, cut it into small squares. Or break the tablet into unique chunks for a more rough around the edges, traditional look.
